Ingredients:
3 red kapia peppers
3 fresh tomatoes
½ onion, chopped
2 garlic cloves, minced
15 ml olive oil
A handful of parsley, chopped
Chili flakes, to taste

Instructions:

Roast the Peppers:

Preheat your air fryer or oven to 180°C (356°F).
Place the kapia peppers inside and roast for 15 minutes, turning halfway through.
Once roasted, place the peppers in a covered bowl for 10 minutes to steam. Peel off the skin, remove the seeds, and set aside.

Prepare the Tomatoes:

Make a shallow cross at the base of each tomato.
Place them in boiling water for 1 minute, then transfer immediately to ice-cold water.
Peel the skin off and roughly chop.

Sauté the Aromatics:

Heat olive oil in a pan over medium heat.
Add the chopped onion and garlic, sauté until fragrant and softened (about 2-3 minutes).

Cook the Sauce:

Add the roasted peppers, prepared tomatoes, and chopped parsley to the pan.
Simmer gently for 10 minutes, stirring occasionally.
Add chili flakes to taste and adjust seasoning with salt and pepper.

Blend the Sauce:

Use an immersion blender or transfer the mixture to a blender. Blend until smooth or leave slightly chunky, as desired.
