Choc berry tofu mousse:
600g silken tofu
1/2 cup strawberry soy yoghurt (can sub for coconut yoghurt)
2 tbsp maple syrup
150g dark chocolate, melted
pinch of salt

Creamy butter bean pie:
1 brown onion, diced
2 garlic cloves, crushed
1 leek, roughly chopped and washed
1 head of broccoli, cut into florets
2 tbsp vegan butter
1/3 cup plain flour
2 + 1/2 cups soy milk
2 tsp vegan chicken stock powder
1 tsp white miso paste
2 tbsp nutritional yeast
800g butter beans, drained and rinsed (from the can, 2 standard cans)
100g filo pastry, torn into chunks and scrunched
** Bake for 20 minutes at 180 degrees celsius, fan forced **

Spinach and ricotta cannelloni:

Tofu ricotta filling:
1 cup cashews, soaked in boiling water for 1 hour
300g firm tofu
1 tsp veggie stock powder
1 tsp vegan beef stock powder
1 tsp dijon mustard
1 tbsp nutritional yeast
juice of 1 lemon
1/3 cup water (add more if needed)
200g frozen spinach, defrosted

Tomato sauce:
1 tbsp olive oil
1 brown onion, diced
2 garlic cloves, crushed
2 tbsp tomato paste
2 tsp smoked paprika
1 x 680g jar passata
1/2 cup water
2 tbsp nutritional yeast
pinch of salt and pepper

Creamy white sauce:
2 tbsp vegan butter
1/4 cup plain flour
2 cups soy milk
1 tbsp nutritional yeast
salt and pepper, to taste

Peanut sauce (for noodles):
1/2 cup smooth peanut butter
1/8 cup soy sauce
1 tbsp rice wine vinegar
1 tsp sesame oil
1/4 cup water (add more if needed)

Muesli bites:
1/3 cup smooth peanut butter
1/8 cup + 2 tbsp maple syrup
2 tbsp coconut oil
1/2 cup soy protein crisps
3/4 cup macadamias
1/2 cup crushed peanuts
3/4 cup pecans
pinch of salt
100g dark chocolate, melted
