If you find that French speakers speak too fast, there is one thing that will help you understand better: the dropped e. This applies to Quebec French, but is also true of colloquial or informal French in France or elsewhere.

The dropped e is a form of contraction where the sound "e" is not pronounced when speaking informally. The e can even disappear in writing: when the letter e is replaced by an apostrophe, that is called an elision. The final e in a word is almost never spoken. Otherwise, whether the e is dropped or not depends on how easy it is to speak the word without the "e" sound: if there are too many consonants around the e, it is too hard to drop it and it is pronounced.

Another phenomenon related to the dropping of the e is what is known as consonant assimilation: when the e is dropped, the sounds of consonants around the dropped e can change as well.
