It's one of my favorite restaurants in Japan and they serve completely organic sushi, meaning all the fish is wild caught and all the ingredients from the salt to the rice to the tea and eggs they serve are organic. (He buys eggs directly from the farmer and can name the source of every fish and ingredient he uses.) They claim to be the only restaurant that does this in Japan. Which really surprised me.
