Ingredients
6-7 short ribs
Salt and pepper to taste
Garlic powder to taste
1 tablespoon of Worcestershire sauce
2 heaping teaspoons of tomato paste
4-5 carrots, chopped
2 onions, chopped
1 shallot, chopped
1 head of garlic, cut in half
2-3 springs of fresh rosemary
5-6 springs of fresh thyme
2-3 bay leaves
1 box 32 oz of beef broth
2 cups of red wine
1. Season heavy with salt and pepper on each side of the short ribs.
2. Sear short ribs on each side in a Dutch oven. Make sure to sear in batches.
3. Remove the seared short ribs and set aside.
4. In the same pot, add the onions, shallots, and carrots and season with salt, pepper, and garlic powder.
5. Once the veggies have softened, add Worcestershire sauce, tomato paste, red wine, and beef broth.
6. Place herbs and garlic on top and cover pot.
7. Place into a 350 degree oven for two and a half hours or until fork tender.
8. Remove the veggies and skim the fat.
9. Simmer a bit and return the short ribs to the pot.
10. Serve over mashed potatoes and enjoy.
