2 large chicken breasts (around 1kg or 2.2lbs)
Each breast should give you 3 - 4 fillets
Some chicken wings
1/2 cup hot sauce
2 tsp cayenne pepper
1 tsp salt

►For the Dredge

2 cups (240g) plain flour
2 tsp black pepper
2 tsp paprika
1 tsp mustard powder
2 tsp white pepper
1 tsp celery powder
2 tsp garlic powder
2 tsp onion powder
1 tsp ginger powder
2 tsp MSG
2 tsp thyme, oregano, basil
2.5 tsp salt
2 tsp cayenne pepper (optional)

►For the Wet Batter

2 large eggs
1 tsp salt
1 tsp cajun spice
1 cup soda water
1 cup (120g) plain flour

1 cup plain flour in another bowl

►For Frying

1 litre sunflower oil

►For the Sauce

2 large egg yolks
2 tsp dijon mustard
1 tbsp lemon juice
250ml sunflower oil
2 tbsp chipotle chilies paste
2 tbsp adobo sauce
1 garlic minced
1 tsp worcestershire sauce
1 tsp black pepper
Salt to taste
1 tsp cayenne pepper
1/2 tsp sugar
1/4 cup pickle juice
2 tsp oregano

►For the Fries

1 tbsp oil
Some red and spring onions
1 tbsp chipotle paste and adobo
Large portion of fries
1/2 tsp black pepper
1/2 tsp salt
1 tsp cajun spice
Some parsley

►For Assembling the Chicken Sandwich

Lettuce
Pickles
Sauce
Burger buns
Cheese

►Pineapple Margarita

4 slices of pineapple
half lemon and lime
Few mint leaves
1 cup pineapple juice
1/2 cup orange juice
1 - 2 tbsp sugar syrup
Some Ice
