Bakers yeast was not readily available in Ireland, so they used the bicarbonate soda (baking soda), mixed with buttermilk in order to bake their breads. When you mix baking soda and buttermilk, a chemical reaction occurs that produces carbon dioxide gas. This reaction is known as acid-base or neutralization reaction. Buttermilk contains lactic acid, which reacts with the alkaline baking soda (sodium bicarbonate) to produce carbon dioxide gas bubbles. It is these bubbles that help the dough rise and give baked goods their light and fluffy texture. This reaction is essential in recipes like Irish soda bread, oat bread and others where the carbon dioxide gas helps leaven the bread without the need for yeast. It was used as a beloved staple in Irish cuisine. It was very important for the Irish to teach their little-one's how to cook, and soda bread was one of the first recipes taught. Here are the ingredients for traditional Irish soda bread:
2 cups (240 grams) all-purpose flour
-1 3/4 cups (210 grams) whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons sugar (optional)
1 3/4 cups buttermilk (or you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 3/4 cups of milk, let it sit for 5-10 minutes until it curdles slightly)
1 large egg
1 cup raisins or currants for a sweeter version (optional)
1TBL rolled oats (optional)

Baking Instructions:
-Cook at 425°F (220°C) for first 15 minutes.
-Reduce oven to 400°F (200°C) and cook for an additional 30 minutes.
-Internal temperature should be 200°F (93°C).
-Place loaf on a cooling rack for at least one hour. Allow the bread to cook completely before serving.

Instructions:
-In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking soda and salt. Give it a good mix. Set dry ingredients aside.
-In a separate bowl, combine buttermilk and egg.
-Create a well in the center of the flour, add buttermilk mixture to it.
-Use your hand like a claw and in a circular motion bring all ingredients together. Then add the raisins and incorporate completely. Don't mix too hard, we're not trying to form any gluten structure.
-Once ingredients are mixed well, turn the dough out onto a lightly dusted work surface.
-Start by shaping the dough into a log, then form into a 1 1/2" (3.8 centimeters) tall round boule.
-Transfer onto a parchment lined baking sheet.
-Lightly glaze the top and sided of your loaf with the remaining buttermilk.
-Add rolled oats to the top of the loaf.
-Place on the middle rack in the oven at 425°F (220°C) for 15 minutes.
-Reduce temp. to 400°F (200°C) for an additional 30 minutes, or until golden brown crust.
-Remove from oven, place. onto a cooling rack for at least 1 hour or room temperature, as the bread is still cooking. If you slice your loaf too early, you will change the structure of your dough.

These simple ingredients come together to create a deliciously crusty and slightly dense bread that's perfect for serving with soups, stews, or simply slathered with butter.
