BROCCOLI ITALIENNE (pg 32)
10oz frozen chopped broccoli or broccoli spears
2Tbsp olive oil or melted butter
1Tbsp lemon juice
1 small clove of garlic, minced

Cook broccoli as directed on the package. Drain well. Combine olive oil, lemon uice, and garlic and pour over the broccoli. Mix lightly. Serve at once.


CREAMED PEAS AND MUSHROOMS (pg 38)
10oz frozen peas
1/4lb fresh mushrooms, sliced
1/4tsp grated onion
3Tbsp butter
2Tbsp flour
1 cup light cream or milk
1/2tsp salt
dash of pepper
dash of nutmeg

Cook peas as directed on package; drain. Sauté mushrooms and onion in butter until the mushrooms are tender. Add flour and stir until blended; then add cream or milk gradually and cook and stir over medium heat until thickened. Add salt, pepper, nutmeg, and the peas; heat thoroughly.

Prepare ahead hint: Make sauce with mushrooms as directed. Refrigerate. Just before serving, cook peas, add salt, pepper, nutmeg, and peas to sauce, and heat as directed.

SPINACH CASSEROLE (pg 32)
10oz frozen chopped spinach
1Tbsp chopped onion
1 clove garlic, minced
1/2c chopped mushrooms
2Tbsp butter or other fat
2Tbsp flour
1c milk
2 hard cooked eggs, chopped
1/2tsp salt
dash of pepper
1/4c butter bread crumbs
1Tbsp grated Parmesan cheese

Cook spinach as directed on the package. Drain. Sauté onion, garlic, and mushrooms in butter until tender. Stir in flour. Gradually add milk, blending well, and cook until mixture is thickened, stirring constantly. Add spinach, eggs, salt, and pepper. Pour into a greased casserole. Combine bread crumbs and cheese. Sprinkle over spinach, Place under broiler until crumbs are browned - about 5 minutes.
