Jubei Yamada is a Judo master, known as “The Demon” in his youth. He was known as a powerful and admired fighter. In the current time, he takes care of his dojo and try to leave a peaceful life. Mai Shiranui’s grandfather eventually requested him to give additional training to her and eventually Andy Bogard, which revived Jubei’s passion for fighting. Since then, he returned to the fighting scene from time to time. When Wolfgang Krauser set up the second Fatal Fury tournament in order to find Geese, he joins his two students into the tournaments with the intention to show the current generation that he can still compete with them.

Jubei is a charge character and a grappler. He has many throws technique from Judo as well a multi-hit grab and a counter air throw. He also has a few special moves. His projectile is his favourite cookies, known as Senbei-Shuriken , thrown in a way that it is actually able to hurt his opponent. He has a dashing technique known as the Nihon Seoi Dash that consist of rushing toward his opponent and perform a throw technique. Finally, he can perform the Ooizuna Otoshi that brings his opponent high in the air before slamming him/her on the ground. His desperation move is a more power version of the Ooizuna Otoshi known as the Dynamite Izuna Otoshi.
