Poori and mixed veg. Kurma hotel style
INGREDIENTS AND PROCESS:
INGREDIENTS:
PURI INGRDIENTS :
2 cups wheat flour
1 tsp. salt
1/2 tsp. cumin seeds
1 cup water
Oil for deep fry
KURMA INGREDIENTS:
2 medium size carrots
1/2 cup cauliflower dices
1 large potato
8-10 green beans
1 tbsp. green peas
3 tomatoes
1 small onion
2 green chillies
1/2 cup chopped coriander leaves
1 tbsp. poppy seeds
1/2 cup coconut powder
2 tbsp. cashews ( 10-12)
3 tbsp. oil
1 tsp. fennel seeds
2 Bay leaves
2 - 1 inch cinnamon sticks
2-3 Cloves
Curry leaves
1 tsp. salt or as per taste
1/2 tsp. ginger garlic paste
1 tsp. red chilli powder
1 tsp. coriander powder
1/2 cup water
1 cup warm milk
PROCESS:
Kurma Process:
..... Soak poppy seeds for 30 minutes
..... Wash and cut vegetables
..... Steam green beans, potatoes, carrots and cauliflower
..... Grind poppy seeds, cashews and coconut powder to paste
..... Next heat a pan on medium heat
...... Add oil and temper spices above
..... Add curry leaves
...... Next add onions and turmeric powder fry for a minute
..... And green chillies and cook for two minutes
..... Now add salt and ginger garlic paste mix well
..... mix well and cook for 2 minutes on medium heat
..... now add tomatoes and cook until tomatoes softened
..... Next add steamed vegetables and green peas and mix well
..... Now add red chilli powder , cumin powder, garam masala powder and coriander powder
..... Mix well and add previously grinded paste
..... Add water, milk, and chopped coriander leaves
..... Mix well and cook on low heat for ten minutes
..... Turn off heat
..... Serve with Puri, Chapati, naan, rice and bread
Puri Process:
.... Add wheat flour to bowl
.... Next add salt and cumin seeds and mix
.....Add water little by little while knead dough
.... Add little oil on top
.... And cover with cloth or plastic wrap
.... Rest for 10 minutes
.... After 10 minutes knead dough again for 1 or 2 minutes
.... Press puri as seen in the video
.....Next heat oil for deep fry on medium high heat
.....Fry puris in hot oil as seen in the video
.....Serve puris with Vegetable Kurma
