Ingredients:
La Scala Salad
3 cups romaine, sliced
3 cups iceberg, sliced
1/2 cup sun-dried tomatoes, chopped
1/2 cup artichoke hearts, chopped
1/2 cup mozzarella, grated
1/2 cup salami, julienned
2 cups chickpeas

Dressing
1 tablespoon Dijon
1 tablespoon honey
2 tablespoons red wine vinegar
6 tablespoons EVOO Terra Delyssa
1 kosher salt
3 twists black pepper
3 tablespoons parmigiana, grated

Method:
1. Toss all the ingredients, except for the chickpeas into a large bowl.
2. Place the chickpeas into the bottom of an 8-inch bowl.
3. Mix the dressing and dress the chickpeas. Dress the salad and place it on top of the chickpeas. Then do the flip-a-roo.
4. Garnish with more parmigiana and serve.
