Keto Pop Tarts

Ingredients:

2 cups almond flour
2.5 tablespoons coconut flour
2.5 tablespoons cream cheese
1/2 cup powdered sweetener (Magic Baker's in a blender is best!)
2 large eggs + 1 yolk (beat 1 of the eggs)
2 tablespoons soft butter
1 1/2 teaspoon vanilla extract
1/8 teaspoon salt

For the Filling:

1.5 cups of sliced strawberries or blueberries or 3/4 cup of each
3/4 teaspoon xanthan gum
Water

Icing:
1/2 heaping cup powdered sweetener
1 tablespoon or so of water (watch video for consistency)

Preheat your oven to 350°F.
Mix the almond flour, coconut flour, sweetener, and salt together. Add to the blender and then add in egg, soft butter and cream cheese, and vanilla extract. Pulse until the dough just comes together.
Roll the dough into a ball and wrap it in plastic wrap and chill it in the freezer for 10 or 20 minutes to get cold.
Then, heat the berries on medium, adding a little water to help break down until they are soft. Blend if you want it smoother. Remove from the heat and stir in the xanthan gum. Let it cool all the way.
Cut the dough into equal portions. Roll each portion between parchment paper and cut and roll until you get a rectangular shape. Cut the dough in half and then each half into thirds. You'll have 12 total. Put onto parchment paper lined baking sheet.
Add filling as shown and then top each one with a top. Brush the tops with the beaten egg. Crimp the edges together with a fork, just pressing the top piece into the bottom. You can poke holes on top to let steam out if you want. Pit them in the freezer one more time for 15 minutes.
Bake for 15-20 minutes, or until golden brown.
While the pop tarts cool, mix the icing ingredients together. Add water a little at a time and get the consistency in the video. Paint the icing on top and add sprinkles if you want.
