Spinach Kofta Curry, or पालक कोफ्ता करी, is a delicious and nutritious dish from Uttar Pradesh (UP), India. Here's a recipe for making it UP style:
Ingredients
#### For the Koftas:
2 cups spinach, finely chopped
2-3 tablespoons besan (gram flour)
1 teaspoon ginger-garlic paste
1-2 green chilies, finely chopped
Salt to taste
Oil for frying
#### For the Curry:
2 onions, finely chopped
2 tomatoes, pureed
1 tablespoon ginger-garlic paste
1-2 green chilies, finely chopped
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 cup yogurt, beaten
Salt to taste
Fresh coriander leaves for garnish
Oil for cooking
Instructions
#### Making the Koftas:
1. In a bowl, combine the chopped spinach, grated paneer, besan, ginger-garlic paste, green chilies, and salt. Mix well to form a dough-like consistency.
2. Divide the mixture into small portions and shape them into round balls (koftas).
3. Heat oil in a deep pan or kadhai. Deep fry the koftas until golden brown and crispy. Remove and drain on paper towels. Set aside.
#### Preparing the Curry:
1. Heat oil in a pan. Add cumin seeds and let them splutter.
2. Add finely chopped onions and sauté until they turn golden brown.
3. Add ginger-garlic paste and green chilies. Sauté for a minute.
4. Add turmeric powder, red chili powder, and coriander powder. Mix well.
5. Add tomato puree and cook until the oil separates from the masala.
6. Lower the heat and add the beaten yogurt slowly, stirring continuously to avoid curdling.
7. Add salt to taste and cook the curry for a few more minutes until it thickens slightly.
8. Add garam masala and mix well.
#### Combining Koftas with Curry:
1. Just before serving, add the fried koftas to the curry and gently mix.
2. Garnish with fresh coriander leaves.
#### Serving:
Serve hot with steamed rice, naan, or roti.
