Kantola ki Sabji - Jain Recipe

Kantola is an excellent source of dietary fiber, vitamins, and minerals such as vitamin C, vitamin A, calcium, iron, & potassium. It helps in bolstering the immune system, promoting bone health, & supporting overall well-being. I have created Jain recipe without using Ginger or Garlic; but you can use it if you want to, as explained in video.

Ingredients :
Spiny Gourd (Kantola, rinsed and cut into pieces)
3 tbs Oil
Pinch of Asafoetida Powder (Hing)
Salt as per taste
1/2 tsp Turmeric Powder (Haldi)
1 tbs Coriander Powder (Dhaniya Powder)
Red Chilli Powder (as per taste)
1/2 tsp Dry Mango Powder (Amchur Powder - optional)
Chopped Coriander

Method :
Take rinsed Spiny Gourd (Kantola - cut into half and then into vertical pieces)
Heat 3 tbs Oil in a pan
Add a pinch of Asafoetida Powder (Hing)
Add cut Kantola
Add Salt as per taste
Add 1/2 tsp Turmeric Powder (Haldi)
Cover the lid and cook for 7-8 min on slow to medium flame
Add 1 tbs Coriander Powder (Dhaniya Powder)
Add Red Chilli Powder (as per taste)
Add 1/2 tsp Dry Mango Powder (Amchur Powder)
Mix everything well, cover the lid and cook for another 5 min
Sprinkle some chopped Coriander
Turn off the heat & take it on a serving plate
Enjoy Delicious Kantola ki Sabji with Roti, Paratha, Puri or Rice.
