MEDITERRANEAN BLACK BEAN SALAD

MEDITERRANEAN BLACK BEAN SALAD‪@jeanniesdk‬
Dressing
2-3 tablespoons olive oil
1 table spoon lemon juice, plus the rind grated
1 clove of garlic minced
1 teaspoon fresh oregano or dried
1/2 tablespoon fresh thyme
1/2 teaspoon sea salt and black pepper to taste

1 Large can of Goya black beans (29 ounces)
1 small chopped red onion
1 small english cucumber diced
1 red pepper diced
1/2 cup kalamatsa olives sliced
1/4 cup fresh parsley chopped

Wash black bean and strain, add to large bowl and set aside.
In medium bowl mix the dressing ingredients together and add to the bowl with the beans.
Add all the other ingredients, toss and serve.
