"Tarator" Yogurt Cucumbers Cold Soup
The Spanish have gazpacho, we Bulgarians have tarator. The favorite of young and old is a
summer, cooling, cold soup with yogurt and cucumbers. In the spring you can find it in a version with finely chopped lettuce instead of cucumber, and in the winter -with pickles.
Tarator is a fresh coolness on a hot summer day, a simple elegance in a bowl or glass. There is nothing else to compare finely chopped crispy cucumber, combined with thick yogurt, garlic, dill and crushed walnuts. All this elegance is seasoned with two pinches of salt
and a drizzle of olive oil. And although we do not intend to write an ode to tarator, its undeniable taste qualities make us want to go in that direction.
In every family, this traditional Bulgarian cold soup isprepared in a different way. Surprising, but true,since at first glance there are not many subtleties inthe execution of the recipe. Yes, but no. Makingtarator is a real art that not everyone masters,even if they think otherwise.However, tarator is not only in Bulgaria, even if itstype is not exactly the same. These dishes arefamous in Middle Eastern cuisine. Among them arethe well-known Greek tzatziki and the Turkishtzatziki. Their origin is also unknown, but we canclearly see their etymological connection.Earlier versions of the cold soup famous in our landstake us all the way to the 16th-18th centuries.Although not under the name "tarator", during thisperiod it was mentioned by Western travelers whovisited Bulgaria.The truth is that there are many variations oftarator in different countries of the BalkanPeninsula. Somewhere the recipe includes heavycream instead of water-diluted yogurt, elsewherethe cucumber is replaced by vegetables such aszucchini, radishes, carrots, etc.
