Here's a recipe for Potato Kurma using the ingredients you mentioned:

Ingredients
2 large potatoes, peeled and diced
2 tablespoons sesame seeds
2cup dry coconut, grated
2 tablespoons fresh coconut, grated
2 tablespoons ginger-garlic paste
1 large onion, chopped
2 large tomatoes, chopped
1 teaspoon cumin seeds
1 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt, to taste
2 tablespoons vegetable oil
Fresh cilantro, chopped (optional)
-curry leaves

Soak and grind the masala:
-sesame seeds
-dry coconut powder
-fresh grated coconut
Soak them for 15 min and make it into smoothie paste…

Instructions
1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
2. Add the chopped onion and sauté until it's translucent.
3. Add the ginger-garlic paste and sauté for another minute.
4. Add the chopped tomatoes and sauté until they're soft and mushy.
5. Add curry leaves..
6. Cook the masala until the raw smell goes away and separate oil..
7. Add the diced potatoes, garam masala powder,turmeric powder, red chili powder, and salt. Mix well.
8. Add 1 cup of water and bring the mixture to a boil.
9. Reduce the heat to low and simmer, covered, until the potatoes are cooked through and the kurma has thickened.
10. Garnish with chopped cilantro, if desired.
11. Serve the Potato Kurma with rice, roti, or idlis.

Tips
You can adjust the amount of chili powder to suit your desired level of spiciness.
If using fresh coconut, you can grate it just before adding it to the kurma to avoid it becoming rancid.
Sesame seeds add a nice nutty flavor to the kurma….
