Gluten-Free Pizza – recipe makes 3, ten-inch GF Pizzas
Ingredients:
For the Dough
• 500 gm (1.1 lbs.) (17.637 ozs.)Caputo Brand “Fioreglut” Gluten-Free Flour (GFF) (this is essential – do not substitute)
• 400 ml (400 gm) (14.1 oz.) Luke-warm water (around 80 – 90 deg. F)
• 1 TBSP (10 gm) Extra Virgin Olive Oil (EVOO) and more for dusting/coating (alternate: regular Olive Oil)
• 2 ½ TSP salt (12 ½ gm) (0.441 oz)
• ½ TSP Instant Yeast (2 gm) (0.0705 oz)
• More GFF for dusting
Pizza Toppings – use whatever you like…today I used:
• Tomato sauce
• Shredded mozzarella cheese
• Mushroom tapenade (bruschetta) (alternate fresh sliced mushrooms)
• Pepperoni
Process
• Add yeast to the water and mix
• In a bowl, add yeast/water mixture to the flour, and with a spatula (coated with EVOO), mix the flour and yeast/water together, until all flour is incorporated (only takes a minute)
• Add salt and mix in
• Add the 1 TBSP EVOO and with your hands, mix in, and form your dough (takes about 15 - 30 seconds)
• Sprinkle some GFF on your counter and place dough on top. Divide dough into 3 equal size pcs (300 gm each)
• With EVOO on your hands, just roll the dough into a ball shape, place in a container and cover it. Let stand 1 hour if using same day. (After 30 minutes, Preheat your oven to 500 deg. F. with pizza stone in it)
• Then sprinkle GFF on the counter, remove the dough from the container and place on counter.
• With EVOO on your hands, start to form the dough into a 10-inch round, by pushing down from the middle of the dough, and working your way outwards – leaving a higher ridge for your crust.
• Lightly dust some GFF on a pizza peel and place the 10-inch round dough on top
• Add your toppings
• Slide your pizza into your pre-heated oven, onto your pizza stone
• Cook for 9 minutes min- 10 minutes, depending on your oven or 12 minutes if you want it crispy
• Enjoy
NOTES:
• GF Pizza Dough, does not handle like regular dough – it’s totally different and must be shaped by hand (i.e you cannot toss this dough)
• When cooked, it will not get dark, like your regular pizza does
• I like to brush some EVOO on the crust after the pizza comes out, but you can do this before it goes in, to add more color.
• Another option for more color is to cook your pizza for 8 – 9 minutes on the lower rack, then bump it up to the top rack and broil for the last minute or 2 😊
• This whole process from start to finish takes less than 2 hours
• If you refrigerate your dough for next day use, remove from fridge 2 hours prior to using it
