Methi Chaman is a Kashmiri recipe made up of Methi and Palak. Methi means fenugreek and Chaman means paneer in Kashmiri, thus the name Methi Chaman. It is the delicacy recipe that can be prepared during the festival season or any special occasion. It tastes good when served with roti or naan, but can also be served with choice of rice. Try this out it will surely melt your hearts!!

Ingredients:
1. Methi (Fenugreek) leaves - 200 gms
2. 1 Cup Spinach / Palak - 200 gram
3. 1 Cup Green chili - 4 Oil 2 tbsp
4. Cumin seeds 1 tsp
5. Tej Patta – 1
6. Onion - 1
7. Chopped Besan - 1 tsp
8. Ginger garlic paste - 1 Tbsp
9. Red chili powder - 1 ½ tsp
10. Coriander powder - 1 tbsp
11. Black pepper powder - ½ tsp
12. Garam masala powder - 1 tsp
13. Roasted jeera powder -1 tsp
14. Salt to taste
15. Water ½ cup
16. Butter 2 tbsp
17. Cream 2 tbsp

Method:
1. Wash and Boil Methi and palak and blend it to a coarse paste.
2. Take a pan add oil, garam masala cumin seeds, chopped onion finely cook till onions are golden brown colour then add, garlic crushed, turmeric, butter, ginger garlic paste, green chillies, saute it.
3. Add salt, the paste of methi/ palak, sugar, mix well then add coriander powder, ginger powder until it cooks, make sure you use the slow flame.
4. After methi has been cooked, add water as needed, cream mix well then add paneer slices, let it cook for 3-4 minutes then add coriander leaves serve with roti/ phulka.
