I really hope you enjoy this video. We're starting off with a slow Saturday, baking a seasonal, springtime recipe on Sunday and a Shein Homewear haul on Monday after work, before a cook-along-with-me making tacos!!

Rhubarb & Marzipan Cake
(Makes one large cake)

250g plain flour
1 tsp baking powder
¼ tsp salt
70g butter
200g caster sugar
2 eggs
Grated zest and juice of 1 lemon
1 tsp vanilla extract
100g marzipan, cut into
5mm chunks
100g forced rhubarb, in 5cm chunks
15g flaked almonds

To make:
1 Preheat the oven to 160C/Fan 140C/ Gas 3. Grease and line a 20cm cake tin with baking paper.
2 In a bowl, combine the flour, baking powder and salt.
3 Meanwhile, beat together the butter, sugar, eggs, lemon zest and juice in another bowl.
4 Stir in the vanilla extract and the marzipan chunks.
5 Fold the flour mixture into the wet mixture briefly. You want this to be barely combined and still lumpy.
6 Transfer to the prepared cake tin and then arrange the rhubarb chunks and flaked almonds over the top.
7 Bake for 40-50 mins, or until golden and a skewer comes out clean.
8 Leave in the tin for 10 mins before turning out onto a wire rack to cool completely before cutting.
(TIP; for me, 140 degrees wasn't hot enough, so I turned up to 160 degrees and cooked for another 10 mins).

TACOS!!
And the recipe for the tacos is:
(Instructions for 2 - Cooking for 4? Double each ingredient)
Step 1
Add the basmati rice and 250ml [500ml] cold water to a pot with a lid and bring to the boil over a high heat
Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has been absorbed and the rice is cooked, then remove from the heat and keep covered until serving
Step 2
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Tip: This is to warm your tortillas later – alternatively, add them to a plate and pop in the microwave for 1-2 min
Heat a large, wide-based pan (preferably non-stick) with frylight, over a high heat
Once hot, add the beef mince with a generous pinch of salt and cook for 3-4 min or until browned, breaking it up with a wooden spoon as you go
Step 3
While the mince is cooking, chop the tomato[es] finely
Cut the lime[s] in half
Combine the juice of 1/2 [1] lime with the fat free fromage frais or fat free plain yogurt in a small bowl
Season with a pinch of salt and pepper – this is your lime sauce
Step 4
Once browned, add the smoked paprika and chilli flakes (can't handle the heat? Go easy!) to the beef and cook for 1 min or until fragrant
Add the chopped tomato, chipotle paste (not a fan of spice? Just add a little!) and honey and cook for 3-5 min or until the tomato begins to break down and the beef becomes crispy and sticky – this is your sticky chilli beef. (Tip - If you don't have chipotle paste, just add smoked paprika, chilli flakes, cayenne pepper, ground cumin, ground coriander, ground black pepper, garlic, and oregano. )
Step 5
Meanwhile, add the tortillas to a baking tray and put the tray in the oven for 3-4 min or until warmed through and beginning to crisp slightly (or just warm on low/medium in the microwave!)
Step 6
Wash and shred the gem lettuce finely, then pat it dry with kitchen paper, or dry in a salad spinner!
Grate your cheese
Step 7
Cut the remaining lime into wedges
Fluff the basmati rice with a fork and season with a pinch of salt
Build your tacos by layering up a warmed tortilla with some basmati rice, a handful of shredded lettuce and a dollop of the sticky chilli beef
Sprinkle over some grated cheddar flavour block and a drizzle of lime sauce, then scoop your tacos up.
Garnish with a lime wedge

TIP! If you wanted to save extra syns on this (if your follow Slimming World) you could use lettuce leaves in place of the wraps for a syn-free alternative wrap. Then you only need to allocate your syns for the cheese! Everything else I cook with here is syn-free!!
