It's my favorite day of the week y'all! SATURDAY! 🤗👏🤗 We start the day with some Bacon Egg & Cheese Biscuits, Titus and Tyler head out to do some shoeing & help start a filly for a customer, we clean up the mini garden a little, and for supper we make Hamburger Steaks with Baked Potatoes, and Southern Cornbread Salad! I forgot to tell y'all how good it was in the video, but Y'all! Let me just tell you, it is GOOD! If you like to mix your cornbread with beans and onions, you will LOVE this salad! Don't worry about it being cold, that kinda scared me a little 😆, but it was delicious! 😁👏

Southern Cornbread Salad
Ingredient:
4 cups baked cornbread, crumbled
1 (1 oz) packet Ranch seasoning
1 1/2 cups sour cream
1 1/2 cups mayonnaise
2 (15 oz) cans pinto beans, drained and rinsed
2 large tomatoes, diced
1/2 red onion, diced
1 cup green bell pepper, chopped
1 cup green onion, chopped
1 cup cheddar cheese, grated
1 lb bacon, cooked and crumbled
2 (11 oz) cans corn, drained

Directions:
In a small bowl, whisk together the Ranch seasoning, sour cream, and mayonnaise. Set aside.
NOTE: The recipe said to make two layers of each ingredient, but I just did one layer like the picture did and it was great!
Lightly crumble half of the cornbread in the bottom of a large trifle dish. Layer with half of the pinto beans, half of the tomatoes, half of the red onion, half of the bell pepper, half of the green onion, half of the cheddar, half of the bacon, and half of the corn.
Top with half of the dressing mixture and repeat all layers once more.
Cover and chill until ready to serve.

Buttermilk Biscuit Recipe:
2 cups self rising flour
6 TB unsalted butter (cold)
1to 2 cups buttermilk, NOTE: You may need more or less depending on the thickness of your buttermilk.

Directions:
Preheat oven to 350°
Combine all ingredients and mix by hand, using a little flour to keep it from sticking to your hands too much. Pinch of pieces a little bigger than a golf ball and roll into ball shape. Pat in extra flour and press slightly onto baking pan.
Bake in preheated oven for 10-15 minutes, until bottoms of biscuits are browned. Brown the tops and spread with butter!
