今天來做個古早味韭菜煎餅。一塊韭菜煎餅,再醮上辣椒醬,真是絕佳配料。這個當早餐或下午茶都很合適!

材料:
韭菜 1把 (約70g)(韭菜洗凈,切小段)
蝦米 30克
普通面粉 1碗 (150克)
粘米粉 2湯匙 (24克)
蛋 1粒
清水 250 毫升
蒜米 2瓣 (剁碎)
小蔥頭 1粒 (剁碎)

調味料:
胡椒粉、鹽


做法:

1、蝦米洗凈,瀝幹水分,再泡浸在水中5分鐘,撈起,把蝦米剁碎,備用
2. 將1碗面粉(150克)和2湯匙粘米粉(24克),1茶匙鹽,少許白胡椒粉,打入1粒雞蛋和蝦米水調成無顆粒狀的面糊,休息15分鐘,待用。
3. 平底鍋放小許油,把蒜米碎和蔥頭碎爆香,加入蝦米碎炒至有香味,然後將韭菜放入,炒一片刻,撈起
4.蝦米和韭菜加入面糊中,攪拌均勻
5.平底鍋放小許油,將多余的油倒出來,加入1勺的面糊,推均勻,
6.待面糊煎至近凝固時,反到另一面,用鍋鏟把面糊壓平,煎片刻把兩面韭菜糊煎香即可。
7.同樣的步驟,繼續把其余的面糊煎完

2 cloves of garlic (chopped)
1 shallot (chopped)

Practice:

1. Wash the dried shrimps, drain the water, soak them in water for 5 minutes, pick up, chop the dried shrimps, and set aside
2. Combine 1 bowl of flour (150g), 2 tablespoons of rice flour (24g), 1 teaspoon of salt, a little white pepper, beat in 1 egg and dried shrimp water to make a non-grainy batter, rest for 15 minutes, and set aside.
3. Put a small amount of oil in the pan, sauté the chopped garlic and shallots until fragrant, add the chopped dried shrimps and fry until fragrant, then put the Chive in, fry for a while, pick up.
4. Add dried shrimps and Chive to the batter and mix well
5. Put a small amount of oil in the pan, pour out the excess oil, add 1 scoop of batter, and push evenly.
6. When the batter is fried until almost solidified, turn to the other side, flatten the batter with a spatula, and fry for a while to fry the Chive on both sides.
7. The same steps, continue to fry the rest of the batter
