Thai Beef Larb

Ingredients

700g minced beef
6-7 shallots, sliced
3-4 green onions, chopped
3-4 culantro (sawtooth coriander), chopped
Fresh mint leaves, to taste
4 tbsp toasted rice powder
3 tbsp fish sauce
3 tbsp lime juice (+ 2 tsp if you prefer sour)
1 tsp sugar
1 tsp MSG
2 tsp salt
5-6 tbsp water

Instructions

1. Heat a pan and add the minced beef followed by water
Use a spatula to break up the beef into small pieces
If you prefer a juicier larb, let the beef simmer until it releases its own juices, then allow the liquid to evaporate to your desired consistency
It’s best to leave some liquid in the pan before seasoning

2. To season, first add the fish sauce while the pan is still hot
Wait until the fish sauce has fully evaporated before adding lime juice, sugar, and MSG
Add salt last to balance the saltiness from the fish sauce

3. Turn off the heat and mix in shallots, toasted rice powder, green onions, and culantro

4. Finish by adding lime juice as the final step along with fresh mint leaves
Serve with fresh vegetables such as cabbage, long beans, or cucumber
