1. Shahi Matar Paneer
Ingredients:
Potli:
Black cardamom (2), green cardamom (5–6), cinnamon (1"), mace (1), cloves (5–6), black pepper (9–10), bay leaf (2)
Base Gravy:
Tomatoes (4–5), dry red chillies (4), coriander stems (5–6), green chillies (2), cashews (2 tbsp), water, turmeric (½ tsp), oil (1 tbsp), potli
Final:
Oil (1 tbsp), Kashmiri chilli paste (1 tbsp), coriander powder (1 tsp), kasoori methi (1 tbsp), base gravy, khoya (2 tbsp), salt (1 tsp), butter (1 tbsp), matar (½ cup), paneer (200 g), garam masala (¼ tsp), coriander (1 tbsp)
Method:
Pressure cook base with potli. Blend smooth. In oil, sauté chilli paste, add spices and gravy. Mix in khoya, salt, butter, peas, and paneer. Simmer. Finish with garam masala and coriander.
2. Shadi Wala Pulao
Ingredients:
Ghee (2 tbsp), bay leaf (2), cinnamon (1"), black cardamom (3), green cardamom (3), shahi jeera (½ tsp), basmati rice (1½ cup, soaked), cashew (1 tsp), almond (1 tsp), water (3 cups), saffron (10–12 strands)
Method:
Sauté spices and nuts in ghee. Add rice and saffron water. Cook covered till fluffy.
3. Veg Jalfrezi
Ingredients:
Sautéed Veg:
Oil (1 tbsp), diced bell peppers – yellow, red, green (½ cup each)
Masala:
Oil (1 tbsp), jeera (½ tsp), dry red chilli (2), red chilli powder (½ tsp), coriander powder (1 tsp), turmeric (½ tsp), water splash, tomato puree (3), salt (1 tsp), garam masala (½ tsp), kasoori methi (½ tsp), butter (1 tbsp), blanched mixed veg, sautéed peppers, coriander (1 tbsp)
Method:
Sauté peppers. Separately cook masala. Mix in blanched veg and peppers. Finish with coriander.
4. Jain Dabeli Croquet
Stuffing:
Oil (1 tbsp), jeera (1 tsp), hing (½ tsp), green chilli, water splash, red chilli powder (1 tsp), dabeli masala (1 tbsp), amchur (1 tsp), black salt (½ tsp), sugar (1 tsp), tamarind chutney (1 tbsp), mashed raw banana, coriander (1 tsp)
Assembly:
Bread slices, peanuts, flour slurry, breadcrumbs (1 cup), oil to fry, chutney, sev
Method:
Cook stuffing. Flatten bread, fill with stuffing + peanuts. Seal, dip in slurry, coat in crumbs. Deep fry. Serve with chutney, sev.
5. Anjeer Halwa
Ingredients:
Dried anjeer (9–10), water, ghee (2 tbsp), almonds, cashews, pista (1 tbsp each), suji (½ cup), sugar (2 tbsp), khoya (2 tbsp), cardamom powder (½ tsp)
Method:
Boil anjeer, puree. Roast nuts, set aside. Roast suji, add puree, sugar, khoya. Cook till thick. Garnish with nuts.
6. Mint Laccha Paratha
Ingredients:
Wheat dough, oil, pinch of salt & red chilli powder, mint (1 tbsp), flour for dusting, butter (1 tsp)
Method:
Roll dough, sprinkle seasonings + mint. Fold, roll, cook with oil. Brush with butter.
