Chinese cuisine has got numerous ways of preparing and cooking fish and also all kinds of seafood. One of the most popular style is steamed fish in soy sauce and the perking ingredient in this recipe will be thinly sliced young ginger with fresh red chilies. I have selected Chinese Pomfret ( Tauteh in Cantonese ).This fish is very popular in Chinese banquets. Preparation time is minimal provided your fishmonger cleans the fish for you. You can also try with fish fillet or any other fish with central bone only, provided the fish is fresh and not frozen. Enjoy !!!

Preparation time : 15 mins. Cooking time : 15 mins. Serving : 2 Person
Recipe :-
Ingredients :-

Pomfret fish - 300 gms.
Young Ginger - 2 inch piece
Fresh Red chili - 1
Spring onion - 4 stalks
Salt to taste
Sauce :-
Soya sauce - 2 tbsp.
Water - 2 tbsp.
Rice wine = 1 tbsp.
sesame oil - 1 tsp
Sugar - 1/4 tsp
Mix all the sauces and set it aside.
Clean the fish and slit it in 3 lines and salt it all over.
Pour the sauce over the fish and marinate it and set it aside until water boils.
Set the water to boil for steaming the fish.
Cut the ginger and red chili into thin strips.
Cut the bulb of the spring onion into thin strips as well.
Arrange it over the fish, in between the slits and the stomach part.
Once water is starting to boil, put the fish in for steaming for 10 - 12 mins.
Meanwhile cut the ginger, red chili and spring onion again for garnish.
Heat oil in a pan, and add in the ginger, red chili . Once aroma is starting to release , add in the spring onion.
Check the fish to see whether it is cooked.
Add in the garnish and pour the sauce over the fish. Serve it hot with stir fried beansprouts and rice.
Stir Fried Bean Sprouts :-

Bean sprouts - 150 gms.
Big onion - 1/2
Crushed garlic - 2 cloves
Red chili - 1
Spring onion - 2 stalks
Oil - 1 tsp
Salt to taste
Heat oil in a pan and stir the onion, crushed garlic and red chili. Stir for a min.
Then add in the beansprouts and stir in a min. add salt and stir to combine.
