Jacqueline Gomes Nutrition - Making Fat-Loss Delicious

Roasted Zucchini & Tomato Sauce over Pasta
Prep: 10 minutes
Cook time: 25 minutes
Makes: 4 servings

Ingredients
• 2 bell peppers (red and green), seeded and cut into slices
• 1.5 lb beefsteak tomatoes, ripe
• 1 Zucchini, cut into half moons
• 1 onion, sliced
• 4 cloves garlic - minced
• 2 tbsps extra virgin olive oil + more as needed
• 1/3 cup fresh herbs (basil, chives + oregano)
• Kosher salt & pepper
• 1 pinch red pepper flakes (or to taste)
• 12 ounces cooked short pasta of your choice – gluten free, whole grain, garbanzo bean, edamame, etc.

Instructions
1. Preheat oven to 425 degrees F. Add cut up vegetables to a large roasting pan or baking sheet.
2. Drizzle with olive oil, salt, pepper and herbs. Place in oven and roast for about 30 minutes.
3. Remove from oven and allow to cool. Place into a high speed blender and pulse until 4 to 5 times. Process more or less depending on how smooth you want your sauce.
4. Cook pasta according to package directions. Warm veggie sauce and serve over pasta or rice.
