Cheesy Mushroom Pasta
Ingredients
1. Mushroom 200 gm (sliced)
2. Onion 1 large (sliced)
3. Garlic 3-4 juliennes (chopped)
4. Paneer 80 gm
5. Milk 1 cup
6. Pasta 1 and 1/2 cup
5. Salt to taste
6. Red chilli flakes 2 tsp
7. Coriander leaves 1 tosp finely chopped
8. Butter 1/2 tbsp
Method
1. Start by boiling pasta in a large bowl with salt. Once the pasta is boiled sieve it and keep the pasts water reserved for later use.
2.In a Kadhai or pan heat a tbsp of butter and add the chopped garlic and sliced onions.
3. Sauté for 3-4 mins on medium flame until the onions look cooked and start caramelising.
4. Now add the mushrooms with red chilli flakes and salt to taste. Cook for another 3-4 mins on medium flame until the mushrooms are cooked
5. Once done switch off the flame and let the veggies come to room temperature.
6. Next add these cooked veggies to the blender jar with paneer and milk and blend it to a smooth paste to make the base that is the white sauce.
7. In case your white sauce is too think add reserved pasta water to make it of pouring consistency .
8. Lastly in the same Kadhai add the butter and some chopped coriander leaves and sauté for few seconds on low flame for a fresh aroma.
9. Next add the prepared white sauce and boiled pasta.
10. Mix well and cook for another half minute on low flame.
11. Sprinkle the oregano over the top and enjoy 😊
