This week: City walk with Mochi, Oslo main library, ice cream envy and baking for the neighbor's kids.

Recipe -CINNAMON ROLL THINGYS (Don't know what these are called in English)

200g Milk (Full fat is best)
2 Medium Eggs
600g Flour
25g Fresh Yeast
50g Caster Sugar
10g Salt
200g Unsalted Butter

Filling:
150g Unsalted Butter
250g Brown Sugar
2 Tsp Cinnamon

Topping: Vanilla custard

1. Mix milk, eggs, flour, yeast, sugar salt and butter. Prove for about 45 minutes.
2. Make the filling by mixing butter, brown sugar and cinnamon
3. Roll the dough into a square (cut away some of the sides, save till later)
4. Spread the filling onto the dough
5. Divide into three equal parts, roll into three "sausages".
6. Divide the "sausages" into bits of 10-12 ish parts
7. Make into a sircular shape by pinching the dough where the ends meet
8. Make cuts with scissors (More cuts than I made in the video will look better!)
9. Roll small balls from the left over dough that you cut off from the sides, put in the middle
10. Cover and prove for 30 minutes
11. Put vanilla custard in the middle
12. Egg wash for a glossy shine
13. Bake at 200°C
