🌿 Bring the goodness of drumsticks (moringa) to your plate with this Healthy Drumstick Masala! Packed with bold flavors and wholesome ingredients, this dish is easy to prepare and perfect for pairing with rice, roti, or paratha. A nutrient-rich recipe that’s great for winters or a hearty family meal.

Ingredients:
Drumsticks (moringa): 1 cup (cut into pieces)
Onion: 1 (chopped)
Tomatoes: 1/2 (chopped)
Green chili: 1 (chopped)
Curry leaves: 4–5
Ginger: 1 tbsp (chopped)
Garlic paste: 1 tbsp
Spices:
Cumin seeds (jeera): 1 tsp
Mustard seeds (rai): 1 tsp
Kashmiri red chili powder: 1 tsp
Coriander powder: 1 tbsp
Cumin powder: 1 tsp
Turmeric (haldi): 1 tsp
Kasuri methi: 1 tsp
Salt: to taste
Water: 1/2 glass
Oil: for cooking
Fresh coriander: for garnish
Step-by-Step Instructions:
1️⃣ Sauté the Drumsticks:

Heat oil in a pan and sauté the drumstick pieces for 2–3 minutes. Set aside.
2️⃣ Prepare the Tempering:

In the same pan, heat oil and add cumin seeds, mustard seeds, green chilli, curry leaves, chopped ginger, and garlic paste. Sauté until aromatic.
3️⃣ Cook the Base:

Add chopped onions and cook until golden brown.
Stir in chopped tomatoes and cook until they become mushy.
4️⃣ Add the Spices:

Mix in Kashmiri red chili powder, coriander powder, cumin powder, turmeric, kasuri methi, and salt. Cook until the oil separates from the masala.
5️⃣ Combine Drumsticks & Simmer:

Add the sautéed drumsticks and water to the pan. Cover with a lid and cook on low heat for 10–15 minutes until the drumsticks are tender.
6️⃣ Finish & Garnish:

Increase the flame to high and cook for 1 minute to thicken the gravy. Garnish with fresh coriander leaves.
7️⃣ Serve & Enjoy:

Serve hot with rice, roti, or paratha for a wholesome meal.
