Kombu (Kelp)
Water
Dried Shitake Mushrooms

Method:
Soak dried kombu in cold water for 1-3 hours
Bring to just below boiling and skim any surface residue
Remove kombu
Add dried mushrooms & let rehydrate until close to room temperature
Squeeze all water out of the mushrooms
Store in large container
Optional - keep the mushrooms in the dashi for an extra 12-24 hours
