Chef De Cuisine Paolo Pera's love for food started when he was a child, cooking in his grandmother's kitchen in Tuscany. His grandmother is still cooking at 98 years old, keeping her family recipes a secret to all but Paolo and Oceania Cruises' guests.

For Director of Culinary Programs & Development Alexis Quaretti, discovery is his favorite part of cooking which is why he encourages all Oceania chefs to go out and test local foods and bring flavors back into the test kitchen.
