👉Ingredients:

•1 pack white mushrooms (227 gms)
•2 red onions, sliced
•4 tbsp salted butter (for the mushrooms and onions)
•1 tsp chilli flakes
•Salt to taste
•1/2 tsp crushed black pepper
•1/2 tsp dried thin
•4-5 cloves of garlic, thinly sliced
•1 tbsp balsamic vinegar
•1 pack puff pastry (any store-bought brand works) I used the great value brand from ‪@Walmart‬
•Honey Goat Cheese, 65 gms ( I used Celebrity Coat cheese brand)
•Zest of one lemon
•A pinch of Salt and crushed black pepper (for the goat cheese filling)
•Handful of chopped parsley
•Crumbled feta cheese (as required) I used Tre Stella brand as it’s suitable to vegetarians

👉Method:

Prepare the puff pastry as per the package instructions.

Now add 2 tablespoons of salted butter into a nonstick pan and then add the thinly sliced mushrooms. Sauté the mushrooms until all the natural water from the mushrooms evaporates. This should take approximately 7 to 8 minutes on medium heat. Season with some chilli flakes, salt to taste, garage to black pepper, and dried thyme. Give everything a good start and cook for another minute. Add the sliced garlic give everything a mix and cook the mushrooms along with the garlic for another minute or two until the garlic is slightly golden in colour. Once the mushrooms are done remove them from the pan and set aside.

In the same pan, add the remaining butter, once melted add sliced onions and let the onion cook on low heat for 10 to 12 minutes. Season with some salts to taste and mix well. After around four minutes add in the balsamic vinegar do the onions and let it cook for another 2 to 3 minutes on low heat. Once the onions are done, turn the stove off off and set aside.

Transfer the mushrooms and onions to a ball. Sprinkle some chopped parsley on top and give this all a good mix and keep it aside.

To prepare the goat cheese filling, add the honey goat cheese to a mixing bowl  along with lemon zest and a pinch of crush black pepper. Mix well and side side.

To assemble:

Using a muddler gently press down the puffed centres of the puff pastry so that there is room to fill the centre with the stuffing. Fill the base with the prepared goat cheese mix, and then fill each of the shells with the prepared mushrooms and caramelized onions. Repeat the same process with the rest of the puff pastry shells and then transfer them all to a serving dish. Sprinkle some feta cheese on top and garnish with some chop parsley and these are ready to serve.

This appetizer can be put together in no time and it taste great warm or at room temperature, which makes it easy for entertaining. Give this a try and let me know how you like it.
