Recipe:

Step 1: Dehydrate Items & Turn Into Seasoning Powders
Ingredients
11 oz Ruth’s Chris Filet Mignon
A1 Sauce, Beef Bouillon & H20
Ruth’s Chris Shrimp Cocktail
Ruth’s Chris Cheesecake
MSG & Salt
Maltodextrin


Boil filet mignon in beef stock/A1 until it’s cooked all the way through (this will also help draw out moisture). Pat dry and thinly slice filet. Season with salt & MSG and put in dehydrator or oven at 230F until done.
Take shrimp and cocktail sauce and blend into a paste, season and spread on silpat. Dehydrate at 230F until dry.
Separate Cheesecake filling and Crust, season with MSG and dehydrate separately at 230F until each is dry. Then combine.
Show 1 seasoning being blended: blend dehydrated cheesecake into a powder with maltodextrin and sift out any clumps through a small mesh strainer.

Dehydrator or Oven at 230F
Nutri Bullet thing
Mesh Strainer
Silicone Spats
Knife/Cutting Board

Step 2: Make Your Potato Chips
Ingredients
Ruth’s Chris Baked Potatoes (naked)
Cornstarch
Baking Powder
Rice Flour
Salt


Peel skins off of baked potatoes and discard
Push through a tami and mix with cornstarch, baking powder, rice flour and salt to form a dough
Let rest in refrigerator for 30 minutes
Roll dough out between 2 silpats until almost translucent and use a ring mold to punch out chips
Deep fry until lightly golden.

Rolling Pin
Oval or Circle Ring Mold
Deep fryer

Step 3: Season Potato Chips and Put in Bag
Ingredients
Cheesecake Powder

Divide Chips 60/20/20 (Steak/Shrimp/Cheesecake)
While chips are still warm, use a small mesh strainer to season evenly with each seasoning powder
Place in bag #plating

2 ¼ sheet trays
1 ½ Sheet tray
