Here's the recipe for Aloo Dum using 1 kg potatoes

Ingredients
1 kg small potatoes (chote aloo)
3 tbsp oil or ghee
2 large onions (finely chopped)
2 tomatoes (pureed)
1.5 tbsp ginger-garlic paste
1 tsp turmeric powder
1.5 tsp garam masala
1 tsp cumin seeds
1.5 tsp coriander powder
1.5 tsp cumin powder
Salt to taste
Fresh coriander leaves (for garnishing)
1/2 cup yogurt (optional, for a creamy texture)
1.5 to 2 cups water (adjust as needed)

Boil the Potatoes
Wash the small potatoes thoroughly and cook them in a pressure cooker for about 3-4 whistles, or until tender but firm. Once done, let them cool and peel the skin.

Prepare the Tempering
Heat oil or ghee in a large, heavy-bottomed pan or kadhai. Add cumin seeds and allow them to splutter.

Sauté Onions
Add finely chopped onions to the pan. Sauté them until they turn golden brown.

Add Ginger-Garlic Paste
Add the ginger-garlic paste and sauté for 1-2 minutes until fragrant.

Add Tomato Puree and Spices
Add the pureed tomatoes, turmeric powder, red chili powder, coriander powder, and cumin powder. Cook this mixture for 5-6 minutes until the oil separates from the masala.

Add Potatoes
Add the boiled and peeled small potatoes to the pan. Gently stir them so they are well-coated with the masala.

Cook the Aloo Dum
Add 1.5 to 2 cups of water (depending on the consistency you desire), salt, and garam masala. Stir to combine everything and cover the pan. Cook on low heat for 15-20 minutes, allowing the potatoes to absorb the flavors of the spices.

Optional Yogurt
If you prefer a creamy texture, add yogurt at this point and cook for another 5-7 minutes.

Garnish and Serve
Garnish with fresh coriander leaves and serve hot with roti, naan, or steamed rice.
