Direct heat Carolina style pulled pork tacos.

Tortilla Recipe

Ingredients:
3 cups all purpose flour
1 1/2 tsp coarse salt
2 tsp baking powder
Stick of butter
1 1/2 cups warm - hot water

Directions:
Place flour, salt and baking powder in a food processor and combine.
Add butter and pulse until it looks like wet sand.
Turn on high and slowly add water until a dough ball forms.
Allow to run for 1 minute.
Let the dough rest for 30-45 minutes.
Portion the rested dough into 16 balls that weigh around 50g each.
Cover and let rest 10-15 minutes.
Press or shape with a rolling pin.
Cook in a hot dry pan until desired color is achieved.

Mop Sauce

Ingredients:
1 Stick Butter
1 Onion
1 Lemon
4-5 Cloves Garlic
1tbsp Paprika
1tbsp Dry Mustard
1tbsp Worcestershire sauce
1 Cup White Vinegar
1 Cup Apple Cider Vinegar
1 Cup Hot Sauce I used Texas Pete
1 Cup water (can substitute beer or apple juice)

Directions:
Melt butter.
Sweat onions in the butter.
Add garlic cook for a minute.
Add paprika and mustard powder cook for a minute.
Add remaining ingredients and simmer for 10 minutes before using.
