Looking for a nostalgic tea-time snack or a crispy vegetarian starter? Try this Railway Style Veg Cutlet – made with beetroot, carrots, boiled potatoes, and peas. It’s crunchy on the outside, soft inside, and loaded with flavour! Perfect for evening snacks, kid’s tiffin, or even party starters.
This veg cutlet recipe is inspired by the famous Indian Railways snack served with bread and butter. And the best part? It’s made with easily available ingredients and can be shallow-fried, air-fried, or deep-fried!

Ingredients:
2 medium carrots (grated)
1 small beetroot (grated)
¼ cup beans (finely chopped)
¼ cup green peas (boiled)
1 tsp grated ginger
1 green chilli (finely chopped)
3–4 boiled potatoes (mashed)
2 tbsp breadcrumbs
1 tbsp cornflour
½ tsp turmeric, 2 tsp coriander powder, 2 tsp red chilli powder, 1 tsp black pepper
Salt to taste, lemon juice or amchur
Slurry: 2 tbsp maida, 1 tbsp cornflour, water & salt
Extra breadcrumbs for coating
Oil for frying

Method:
Heat oil, sauté cumin, ginger, and green chilli.
Add hing, chopped veggies, grated carrot & beetroot, and boiled peas.
Toss for 2–3 mins on medium-high heat. Add spices (no salt yet).
Let it cool. Add mashed potatoes, breadcrumbs, cornflour, salt & lemon juice. Mix well.
Shape into cutlets and prepare slurry.
Dip each cutlet in slurry, coat with breadcrumbs, and chill for 30 mins.
Deep fry on medium heat until golden & crisp.
