INGREDIENTS:
Ramen noodles
32 oz. Vegetable broth
1-2 cups water
2 tbsp. soy sauce
1 tbsp. rice vinegar
1 tbsp. fresh lemon juice
1 tbsp. sugar
1 tsp. grated fresh peeled ginger
2 tbsp. sesame oil
red apple, peeled, cored and sliced
lettuce
carrot, sliced into thin strips
3 shiitake mushrooms, sliced
⅓ cup sweet corn

INSTRUCTIONS:
Boil vegetables stock and add ramen noodles. Cook until done. Strain and allow to cool.

In a small mixing bowl, stir together soy sauce, rice vinegar, sugar, water, grated ginger, sesame oil, hot oil, and toasted sesame seeds. Set aside in the refrigerator to chill.

Add dressing to noodles and toss in. Add apple slices, carrots, cucumber slices, lettuce, mushrooms, corn, sesame seeds.

Dressing:
3 tablespoons fresh lemon juice
2 tablespoons soy sauce
1½ teaspoons sugar
1 teaspoon finely grated peeled ginger
(1 tsp. Garlic, 1 clove)
½ cup vegetable oil
1½ teaspoons toasted sesame oil
sesame seeds toasted

Whisk rice vinegar, soy sauce, sugar, ginger, and garlic in a small bowl to combine. Gradually add vegetable oil followed by sesame oil, whisking constantly until emulsified; set aside in the refrigerator to chill.
