Ingredients
Oil - As required
Potato / Aloo - 3 - 4 Peeled and chopped
Bitter gourd / Karele - 5 - 6 Chopped
Salt - As required
Cumin seeds / Jeera - 1 Teaspoon
Asafoetida / Hing - A pinch
Onion / Pyaz - 1 sliced
Ginger green chili paste / Adrakh hari mirchi paste - 1/2 Teaspoon
Turmeric powder / Haldi powder / 1/2 Teaspoon
Red chili powder / Lal mirchi powder - 1 Teaspoon
Coriander seeds powder / Dhaniya powder - 1 and 1/2 Teaspoon
All spice mix powder / Garam masala - 1/2 Teaspoon
Chaat masala - 1/2 Teaspoon
Dry mango powder / Aamchur powder - 1/2 Teaspoon
Jaggery powder / Gud - 1/2 Teaspoon or as per taste
Coriander leaves / Hara dhaniya - A handful
Instructions
1. Take washed and peeled bitter gourds. Remove it's seeds. Cut them into slices.
2. Add salt in the chopped bitter gourd. Keep it a side for 15 minutes. After 15 minutes wash it. Squizze all water by pressing between palms.
3. Take potatoes. Wash them and peel. Cut them into slices.
4. Heat 2 tablespoon oil in a pan. Add potatoes. Mix well. Cook it on medium flame for 5 to 7 minutes, till it turns into a brown colour and becomes soft.
5. When potatoes cooked well. Take out them into a plate.
6. Heat 1 tablespoon oil in the same pan. Add bitter gourd in the pan. Mix well. Cook it on medium flame for 5 to 7 minutes, till it becomes soft.
7. When bitter gourds cooked well. Take out them into a plate.
8. Heat 1 tablespoon oil again in the same pan. Add cumin seeds, asafoetida, onion. Mix well. Cook on high flame for 2 minutes till it turns into brown colour.
9. Then add ginger green chili paste, cooked potatoes and bitter gourds, salt, turmeric powder, red chili powder, coriander seeds powder, all spice mix powder, chaat masala, dry mango powder. Mix well. Add salt carefully, bitter gourd is marinated with salt earlier.
10. Now add jaggery powder. Mix well. Garnish it with coriander leaves.
11. 'Aloo Karela Sabji' is ready to be served.
