I call this dish Persian rice and lentils, but really it's a dish I made up or at least added my own take on a video I saw online, so it's Persian-style. Now as you may already know, I have one or two vegetarian videos on my channel, but not much in the way of vegan dishes. I was over the moon when I tasted this dish, as rice and lentils didn't really sound that appetising and it turned out to be so tasty. Far better than I had imagined. The fruit, nuts and lemon juice really give it a taste punch. Eat it on its own or alongside grilled meat or fish. Vegans and non-vegans will equally love this.

Ingredients
200g green lantils
200g basmati rice
2 medium onions chopped
1 thumb-sized piece of ginger finely chopped
4-5 cloves of garlic chopped
200ml of passata or 1/2 a 400g tin of chopped tomatoes
1 tsp ground cumin
1 tsp coriander powder
1/2 tsp mild chilli powder
Salt and pepper to taste
500ml of water
50g of almond flakes
50g of pistachios
100g of sultanas soaked in hot water
Juice of one lemon
A handful of chopped parsley or coriander (cilantro) or half and half!
A drizzle of olive oil
