Basque cheesecake, also known as cheesecake San Sebastian or burnt Basque cheesecake (Spanish: tarta de queso vasca), is a crustless cheesecake originating from the Basque Country, Spain. It is characterized by its caramelized, nearly burnt exterior and creamy, custard-like interior, achieved by baking at high temperatures. he flavor is subtly sweet with notes of caramel and hints of bitterness from the browned top
Burnt Basque cheesecake was created in 1988 by Santiago Rivera at his pintxo bar La Viña in San Sebastián, a coastal city in the Basque Country, Spain
In 2021, The New York Times listed the Burnt Basque Cheesecake as a "flavor of the year".

Burnt Basque Cheesecake (with Egg)
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serves: 3-4

Ingredients:
400g Cream Cheese (room temperature)
150g Castor Sugar
3 Large Eggs (room temperature)
200ml Fresh Cream
1 tbsp All-Purpose Flour
1 tsp Vanilla Extract

Method:
Grease an 8 inch springform baking tin and double line it with parchment paper.
Whisk the cream cheese till it is soft, fluffy and creamy.
Add the caster sugar and whisk for 2 minutes.
Add the eggs one at a time, blending the eggs completely.
At the fresh cream, flour, vanilla extract and blend well.
Pour the prepared batter into the prepared baking tin and bake at the temperature of 200 degrees centigrade for 35 to 40 minutes till the top is golden brown and the centre is soft yet springy to touch.
Cool for 2 hours and refrigerate for 8 hours or overnight before serving.

Burnt Basque Cheesecake (Eggless)
Preparation Time: 15 minutes

1 tbsp Cornflour
1 tsp Lemon Juice
1 tsp Vanilla Extract

Method:

Whisk the cream cheese till it is soft, fluffy and creamy.
Add the condensed milk and whisk for 2 minutes.
At the fresh cream, corn flour, vanilla extract, lemon juice and blend well.
Pour the prepared batter into the prepared baking tin and bake at the temperature of 200 degrees centigrade for 35 to 40 minutes till the top is golden brown and the centre is soft yet springy to touch.
Cool for 2 hours and refrigerate for 8 hours or overnight before serving.
