How to make Glutinous Rice with Spicy Dried Shrimp / Nyonya Rempah Udang !

Glutinious Rice with spicy Dried shrimp/Nyonya Rempah Udang

Ingredients:
500g Glutinuos Rice (wash and soaked for least 4 hours)
300ml thick coconut milk
some toothpicks & banana leaf (cut into 6'X 6' , soften with boiling water) for wrapping

Filling A spices (all pounded together)
1 stalk Lemon grass (only white part)
7 pcs Red Chilli
7 pcs dried chilli
10 pcs Shallots
5 cloves garlic
25g galangal
1 tbsp coriander powder
5pcs candlenut

Filling B(Pre stir fry until fragrant)
80g Dried Shrimp (finely chopped)
120g grated coconut

Seasonings
salt to taste
brown sugar to taste


Method:

1. Steam Glutinuos rice with high heat for 15 minutes, pour in 150ml thick coconut milk and steam for 15 minutes again. Pour in second portion of 150ml thick coconut milk and steam for another 15 minutes. Set aside.

2.Fillings: heat up cooking oil , Stir fry pounded mixture until frangrant, add in seasonings and add in filling B to stir fry until all mix well. Set aside.

3.Spread about 2 tbsp of steamed glutinous rice in the center of banana leaf, add some filling on top ,and roll it up to form the shape of a small tube. Secure both ends with toothpicks. Repeat until glutinuos rice and filling all been used up.

4.BBQ / Pan-fry / bake at 170C for 10-15 minutes until banana leaves are slightly burnt.

5.Its done!Enjoy!
