Eggless Butterscotch Cake

This is a recipe that all of you will love!
It is a quick and easy recipe for a butterscotch cake. Not just the cake, I am sharing with you how to make the Butterscotch Chips and Butterscotch Sauce as well!
So not just 1 but 3 recipes come your way!

Recipe :

Eggless Butterscotch Cake

Preparation Time : 60 minutes
Cooking Time: 4 minutes + 10 minutes

Ingredients:

For the Sponge base:
1 cup Flour
1 tbsp Cornflour
1 tsp Baking Powder
1 cup Buttermilk
1 cup Sugar
1/2 tsp Baking Soda
1 tsp Vanilla Essence
2:58- 1/4 cup Vegetable Oil

For the Butterscotch:
1/2 cup Sugar
2 tbsp Butter
1/2 cup Cream
1/2 tsp Butterscotch essence
For the syrup:
1 cup Water
4 tbsp Sugar
1/4 tsp Butterscotch Essence

To Cover:
Whipped Cream

Method:
Sift together the flour, cornflour and baking powder.
Mix together the buttermilk and sugar till creamy. Add in the baking soda and mix well. Let it stand for 5 minutes til the mixture is frothy.
Mix in the vanilla, the flour mix and mix well. Add in the oil and mix to incorporate.
Pour the batter in a microwave safe bowl and microwave on high mode for 4 minutes. Remove and allow to rest in the bowl for 10 minutes. Remove the cake from the mold and set aside to cool completely.
Meanwhile prepare the butterscotch.
Place the sugar in the pan and melt the sugar on high heat. Once the sugar is caramelised, add in the butter and mix well to incorporate all the butter in the sugar. Remove half the mixture on a greased plate and set aside to cool.

To the remaining half, add the cream, butterscotch essence and mix well to make the butterscotch sauce and remove from fire.
Once the butterscotch sets, break into small pieces.
Mix together the water, essence and the sugar to make a simple sugar syrup.

To assemble the cake, slice the cake into two halves.
Soak the base with 5 tbsp Sugar syrup.
Apply a 1” thick layer of the whipped cream.
Cover with the butterscotch chips.
Place the second layer of cake, soak with the sugar syrup.
Cover the entire cake with the whipped cream and smoothen out the cream.
Take the butterscotch sauce in a piping bag fitter with the writing tip or make a small cut.
Make a spiral wit the sauce on the top of the cake. Using a tooth pick, make a spider web as demonstrated.
Add Butterscotch chips on the sides as well.
The cake is ready to serve!
