Ingredients:
3 cups dried pinto beans, cleaned
1 onion; finely chopped and 1/2 whole
2-3 garlic cloves
1 tablespoon chicken bouillon
1½ teaspoons ground cumin
1 teaspoon New Mexico chili powder
1 pound uncooked bacon, chopped
2 pounds country-style pork ribs, cut into bite-size pieces
1½ teaspoons salt
1½ teaspoons ground black pepper
10 ounces chorizo
12 ounces smoked sausage, hot dog, or ham, sliced into rounds
3 Roma tomatoes, finely diced
1 red or green bell pepper, finely diced
1 jalapeño pepper or serrano pepper, finely chopped
¼ cup chopped cilantro
5 dried chile de arbol peppers
2 teaspoons dried oregano
1 pound chicharrones (pork skin rinds)
