CONCLUSIONS: By this trial, it is clear that we can sharpen a single-bevel knife with MB-100 on the side of the wheel, but only grinding the narrow EDGE BEVEL. However, re-grind of the low-angle wide primary bevel does not come as nice - the part of the knife that is ground into the edge gets more intensive grinding and higher bevel, while the part of the knife that is ground away from the edge is lagging behind and gets a lower bevel.
A sharpener sees 2 kinds of single-bevel Japanese knives: modern with a clear edge bevel on the primary grind, and traditional where the primary bevel goes to the very edge. My approach for those with clear edge bevel would be to first buff the primary grind on a half-speed buffer to polish it, and then sharpen only the edge bevel on Tormek.
