"Tierce en taille" by Jean-Adam Guilain (c. 1680-after 1739) is the second piece in the suite for the Magnificat in the second tone.

Here are some technical explanations of the title, which may seem strange to non-french organists:
"Tierce" refers to the Tierce stop, consisting of five ranks corresponding to the first natural harmonics: the fundamental, the octave, the fifth, the double octave, and the tierce.
"Taille" is a synonym for "tenor".
These terms indicate that the main melody is played in the tenor register, using the Tierce stop.

Very little is known about Jean-Adam Guilain, not even his dates of birth and death. He was born in the Holy Roman Empire and is believed to have settled in France around 1702. All that remains of him is a manuscript from 1706 and a copy from 1733, both kept in Berlin, containing a collection of organ pieces for the Magnificat in the eight tones of the Church. The collection includes four suites written for a French baroque organ.

This "Tierce en taille" is a simple and moving piece, and the historic organ of the church of Notre-Dame des Vertus in Aubervilliers (1636/late 18th century, beautifully restored by Robert Chauvin) showcases it particularly well.
