Gujia is a sweet dumpling mainly made on Holi Festival in India which is also called Festival of Colors. Its made with all purpose flour covering, stuffed with mawa and dry fruits to give it a super yummy taste.

Ingredients:

2 cups All Purpose Flour (aka Maida)
1 cup Mawa/Khoya (aka Dry Milk Powder)
1/3 cup Milk
Cooking Oil (for frying and kneading dough)
3 tbsp Boora(aka Fine Sugar, aka Sugar)
¼ cup Almonds (chopped)
¼ cup Raisins (aka Kishmish)
½ tsp Cardamom Powder (aka Elaichi Powder)


Instructions:

1. First we will knead dough,for this take a big bowl and add 2 cups of all purpose flour and 4 tbsp oil or you can also use unsalted clarified butter. Now mix them well so that oil blends well with flour. You can check if flour consistency is good by holding in hand, if it holds that means its good. The ratio of ingredients in dough is very important to get good texture of gujiya.

2. When its mixed well lets start kneading the dough, here I am using lukewarm milk which will make gujiyas soft. Now add milk little by little and start kneading it. Remember the consistency of dough should be little harder than roti dough. In total I have used around 1/3 cup of milk.

3. Now cover the bowl and let it sit for around 20 mins so that dough can get smooth texture. Meanwhile, lets prepare filling for gujiya. For this take a big bowl and then add 1 cup mawa, if your mawa is hard make sure to grate or crumble it to get right consistency. Here I have used milk powder mawa but you can also use normal mawa.

4. Now add 3 tbsp bura or you can grind normal sugar to use it. Then add ¼ cup chopped almonds, ¼ cup raisins and ½ tsp cardamom powder. Now mix all ingredients well. If you don’t like these nuts you can also add dry fruits of your choice. Once they are mixed well keep them aside we will use it later in the recipe.

5. After around 20 mins lets check and again knead dough for 30 sec to make it even smoother as smooth dough is good for making soft and crunchy gujiyas. Once dough is ready keep it covered while we make gujiyas, otherwise dough can get dry.

6. So, before making gujiyalets first make binding mixture. For this take a small bowl and add2 tsp all purpose flour and then add 4tsp water. Now mix them well to make a smooth paste, we will use this paste to bind gujiya.

7. Now take dough and make small balls like this, this is the approximate size we want, just be careful don’t make too small balls.Once dough balls are made lets go to next step.

8. Now place all things together to start making gujiyas. So take a dough ball and apply some oil on the surface where you will roll it. Now start rolling the dough to make slightly thinner disc than a normal roti. Now its done and this is the thickness and consistency we want.

9. Now lets see how to fill gujiyas

10. First I am going to use gujiya maker, so place the dough covering on this machine. Now take around 1 tbsp mawa mixture and place it inside covering. Now press it gently to set up the mixture. Just remember not to overfill gujiyas with mawa mixture because that can break and open gujiyas covering while frying. Now gently apply all purpose flour paste on the edges of covering and spread it uniformly. Now gently close it and press with little pressure to close it well. Remove any extra dough while keeping the machine pressed, you can reuse this extra dough. Now open it and press gujiya’s endings to make sure it’s closed well. We are pressing it again to make sure there is no opening left as even a small opening can open further while frying and fillings can come out.

11. Similarly make all gujiyas and keep them covered with a wet napkin or cloth, so that they don’t become dry before frying.

15. Now lets fry them, for this heat oil in a wok on medium heat. Check if oil is medium hot by dropping a small dough ball, if it starts sizzling slowly that means oil is ready. Just make sure if it sizzles a lot and comes up quickly it means oil is too hot which is not good for making gujiya. Oil is ready now so carefully add gujiyas one by one according to the size of your wok. Just make sure not to overcrowd them.

16. Now fry them on medium heat for around 6-7 mins till they become golden brown, just make sure to keep flipping them in between to cook uniformly. If you don’t want to fry you can also bake them in oven, for this preheat the oven at 200 C / 390 F and then bake them for 20-25 mins till they turn golden brown.

17. Now gujiyas have turned golden brown, so take them out on a paper towel so that all extra oil is absorbed.
