小时候的嘴零【耳仔饼】Spiral Crisps

耳仔饼是我小时候爱吃的零食。相信六零后，七零后对它并不陌生。这种耳仔饼亦称牛耳饼。因其形状酷似牛耳朵而得名。口感香脆，回味无穷。

Ear crisp is my favorite snack when I was a kid. I believe that the X generation is no stranger to it. This kind of ear crisp is also called cow's ear crisp. It is named after its shape resembles a cow's ear. The taste is crispy and the aftertaste is endless.

Water-oil dough ingredients/ 水油面团成分
Plain flour 普通面粉 120g
Corn starch 粟粉 20g
Lard 猪油 25g
Water 水 47g±

Stuffing ingredients/ 馅料成分
Plain flour 普通面粉 130g
Corn starch 粟粉 20g
Lard 猪油 15g
Water 水 50g±
Salt 盐 ¼ tsp/ ¼茶匙
Fine sugar 细砂糖 30g
Baking soda 小苏打 1g
Red beancurd 南乳 30g
5-spice powder 五香粉 ¼ tsp/ ¼茶
