Homemade Yogurt Written Recipe with Directions:

Ingredients:

-Fresh Milk (Dodh) 3 Litre
-Dry Milk (Sukha dodh) Powder 6 tbs
-Yogurt 1 tbs
-Water (pani) as required

Directions:

-In a pot, add milk and ½ liter water and bring it to a boil.
-In a separate bowl, add ½ liter water and dry milk powder, and mix well so that there are no lumps.
-When the milk starts boiling, add the mixture to it and mix well. Again, bring it to a boil.
-After boiling the milk, cook it for 1 minute and turn off the flame.
-Transfer milk to a thick stainless-steel tray/pot and stir with a ladle for 1-2 minutes. After that, rest it for 15 minutes.
-In a bowl, add yogurt and water 1 tbs and mix it well. (Do not use a great amount of yogurt to make it sweet)
-When it is lukewarm, just dip your finger to check the temperature. The finger should not burn, neither that finger does not feel the warmth. Milk should be lukewarm. At this point, add the mixture to the milk by removing the layer from the center of it.
-Cover & leave the curd undisturbed in a warm place for 7-8 hours or overnight. (In summer, place a cloth under the tray to keep it warm).
-Refrigerate once the curd sets.

Tips and Tricks:

-The use of dry milk powder makes the yogurt thick.
-Pour the milk from the little height into the tray for a frothy texture.
-While saving the yogurt for future use, add a piece of coconut in it so that it does not turn sour in taste.
