I love making (and eating) focaccia bread, I love cooking with (and eating) pumpkin. Why not combine these two wonderful things into one amazingly tasty pumpkin focaccia bread?
It's a perfect focaccia recipe for fall, with a soft and fluffy texture, a golden crust, and a delicious pumpkin flavor. You can make it with fresh or canned pumpkin puree, and top it with rosemary and coarse salt for a savory and aromatic touch.

I have experimented with various ratios and combinations before presenting this dish to you, I can say that this is the one! If you want big bubble focaccia and you like pumpkin recipes, then try this and you'll not regret it.

To make this pumpkin focaccia bread, you will need the following ingredients:

• Water - 1 ¼ cup (300 milliliters)
• Fresh yeast - 1 tbsp. (10 grams) or 2 tsp. (7 grams) of dry yeast
• Bread flour - 3 ¼ cups (450 grams)
• Pumpkin puree - ½ cup (200 grams)
• Olive oil - 2 tbsp.
• Salt - 2 tsp.
• Rosemary - a few sprigs
• Coarse salt - to taste

Here are the detail steps, watch the video to see how they are executed:

1. Crumble some yeast into the water and mix until dissolved.
2. Add the mixture to the bread flour, add the pumpkin puree, olive oil, and salt. Mix until everything is combined.
3. The resulting dough will be very sticky and soft, don't worry, it's exactly how it should be. Cover the bowl and let it proof for 30 minutes.

4. Stretch and fold
With a wet hand, stretch the four sides of the dough and fold them toward the center. Repeat this step 4 times total, 30 minutes apart. You will notice how the dough becomes more firm and elastic after each fold.
5. After the last fold, leave the dough for another 30 minutes.

6. Grease a baking tray with olive oil and spread it evenly. Grab the dough and fold it on itself just so it becomes easier to transfer it to the tray. Gently spread the dough on the tray with your hands. It should not cover the entire tray, as it rises and relaxes, it will spread by itself.
7. Drizzle some olive oil on top of the dough and massage it onto the surface.
8. Cover the tray and let the dough rise for another 30 minutes.
9. Drizzle some more olive oil on top of the dough (focaccia loves olive oil) and poke the focaccia with your fingers, creating dimples all over the surface.
10. Spread some rosemary leaves on the surface and push them down a little to make them stick to the dough. Sprinkle some coarse salt on top as well.
11. Bake the focaccia in a preheated oven for 20 minutes, or until golden and crispy on top.
12. Enjoy your pumpkin focaccia bread while it's still warm and soft, or let it cool down and store it in an airtight container for later.

There is something enchanting about making focaccia bread at home. The aromas, the excitement of watching the dough grow, the soft poking of the dough before putting it in the oven, your eyes glued to the oven's glass and the expectation.
