🫐 KODIAK CAKES BLUEBERRY MUFFINS 🫐

This is one of my favorite meal prep recipes! Bookmark for your next prep!

INGREDIENTS
2 cups Kodiak Cakes Power Cakes Flapjack & Waffle Mix
1/2 cup brown sugar packed
1 large egg
1/2 cup non-fat plain Greek yogurt
1/4 cup butter melted
3/4 cup skim milk
1 cup blueberries
1/3 cup granola

INSTRUCTIONS
1. Preheat oven to 350F. Prepare a 12-cup muffin tin by spraying with non-stick cooking spray or lining with baking cups; set aside.

2. In a large mixing bowl, add Kodiak Cakes mix, brown sugar, egg, Greek yogurt, butter, and milk; stir until just combined. Fold in blueberries.

3. Using a 1/4 cup measuring cup, spoon muffin mixture into prepared muffin tin. Sprinkle with granola.

4. Bake for 16-18 minutes until an inserted toothpick comes out clean.

165 calories, 6g fat, 22g carbohydrates, 7g protein per muffin
